






Persimmon Trees- 4 varieties
Persimmon trees are medium sized trees, with large leaves, that turn yellow and orange in fall. They produce an orange fruit that ripens in the fall.
They come in two basic types, astringent and non-astringent. Astringent persimmons have high tannin levels, that cause them to be bitter until fully ripe. They can be left to ripen on the tree or be picked and ripened on the counter. When ripe they have a jam or jelly consistency, best eaten with a spoon. Non-astringent types are sweet while they are still crisp and will only get sweeter if ripened further, can be sliced or eaten like an apple
Fuyu - Non-astringent - One of the most popular persimmons, produces a light orange fruit that is slightly flat in shape. Can be eaten crisp, or left to ripen further for a sweeter taste. Tree grows 20-30 ft tall
Hachiya - Astringent - Classic baking persimmon, produces large, dark orange, acorn shaped fruits. Must ripen fully to jelly like consistency. Tree grows 20-30 ft tall
Saija - Astringent - It’s name means “the very best one”, it produces small golden fruits. One of the sweetest persimmons when fully ripe. Tree grows 15-25 ft tall
Rib - Astringent - Produces large deeply ribbed fruits.
